French Creamy Mushroom Braised Chicken

1 small sprig of fresh thyme

Instructions
1.Cut chicken + mushrooms
Cut the chicken thigh meat into chunks, place in the Geedel vegetable chopper (coarse chop setting), and press lightly to trim edges—more uniform than knife-cut, so it won't fall apart while braising and retains tenderness. Trim the roots of mixed mushrooms, cut the onion into chunks, peel the garlic, and place all together in the food chopper (fine chop setting). Press twice to make fine mince—mushroom mince releases rich umami, and onion mince is sweet without pungency.

2.Braise and serve
Melt butter in a pan over medium heat. Sear the chicken thigh chunks until golden brown on the surface (about 5 minutes), then remove and set aside. In the same pan, sauté the onion and garlic mince until fragrant, add the mushroom mince and stir-fry for 3 minutes until moisture evaporates. Pour in chicken stock and thyme, bring to a boil over high heat, add the seared chicken, then reduce to low heat and braise for 15 minutes until the chicken is tender. Add whipped cream, 1/2 teaspoon salt, and black pepper, cook for 5 minutes until the sauce thickens.
