Chocolate Walnut Brownies

For family movie nights or a study break, rich, dense brownies always bring simple joy. This classic American dessert is characterized by its generous walnut texture. Using the Geedel hand vegetable chopper to process walnuts quickly yields the ideal size of pieces, fresher and crispier than store-bought chopped walnuts.

Ingredients:  

200g dark chocolate, chopped  

170g unsalted butter  

3 eggs  

200g granulated sugar  

1 teaspoon vanilla extract  

95g all-purpose flour  

30g cocoa powder  

¼ teaspoon salt  

150g walnut halves  

Optional: flaky sea salt (for sprinkling)  

Instructions:  

1. Prepare the walnuts:

   Spread walnut halves on a baking sheet and toast in a preheated oven at 175°C for 8–10 minutes until fragrant. Let cool. Using the manual food chopper with the dicing blade, place the cooled walnuts in the container and press 3–4 times until coarsely chopped (leave some larger pieces for texture).

2. Melt chocolate and butter:

   Place chocolate and butter in a heatproof bowl. Melt over a double boiler or in short bursts in the microwave, stirring until smooth. Let cool to room temperature.

3. Mix wet ingredients:  

   In a large bowl, beat eggs, sugar, and vanilla with an electric mixer on high speed for 3–4 minutes until thick and pale.

4. Combine the batter:  

   Gradually pour the warm chocolate-butter mixture into the egg mixture, stirring as you pour. Sift in flour, cocoa powder, and salt, and fold with a spatula until just combined. Fold in most of the chopped walnuts.

5. Bake:  

   Preheat the oven to 175°C. Line a 20x20 cm baking pan with parchment paper and grease lightly. Pour in the batter, smooth the top, and sprinkle with remaining walnuts and a pinch of flaky sea salt. Bake for 25–30 minutes, until a toothpick inserted into the center comes out with a few moist crumbs (do not overbake).

6. Cool and cut:  

   Let cool completely in the pan (at least 2 hours)—the brownies will continue to set. Lift out using the parchment paper and cut into squares. Enjoy with milk or coffee.
