Creamy Corn Chowder
This chowder fully captures the essence of summer's sweet corn, offering a rich, smooth texture with the smoky aroma of bacon and fragrant herbs. Using your Geedel food chopper, you can easily puree a portion of the corn kernels to naturally thicken the soup and add sweetness, while quickly preparing the aromatic vegetable base.
Ingredients:
4 cups fresh sweet corn kernels (from about 4–5 ears), or frozen corn
4 slices bacon, chopped
1 onion
1 celery stalk
2 medium Yukon Gold potatoes, peeled and diced
3 cups vegetable or chicken broth
1 cup milk or light cream
2 tablespoons butter
1 tablespoon fresh thyme leaves
Salt and black pepper
Chopped chives (for garnish)
Instructions:
1. Process corn and vegetables:
If using fresh corn, cut the kernels off the cob. Set aside about one-third of the kernels.
Place the remaining two-thirds of corn kernels, onion, and celery chunks into the Geedel manual vegetable chopper (with the chopping blade installed). Turn the handle until the mixture is coarsely chopped but not completely pureed, retaining some texture.

2. Simmer the soup base:
In a soup pot, cook the chopped bacon until crispy. Remove and set aside, leaving the rendered fat in the pot.
Sauté the chopped corn-vegetable mixture in the bacon fat for about 5 minutes. Add diced potatoes and broth, bring to a boil, then reduce heat and simmer for 15–20 minutes until the potatoes are tender.
3. Thicken and emulsify:
Using the mixing paddle attachment, carefully ladle about half of the hot soup mixture from the pot into the Geedel container. Close the lid tightly and turn the handle to blend into a smooth puree.
Return the corn puree to the pot. Add the reserved whole corn kernels, milk (or cream), butter, and thyme. Heat over low until just simmering. Season with salt and black pepper.
4. Serve:
Ladle the chowder into bowls. Top with crispy bacon bits and chopped chives.
Summary:
The secret to this chowder lies in pureeing part of the corn for natural thickening. The Geedel vegetable chopper perfectly controls the degree of ingredient processing, creating a smooth soup base while retaining pleasing texture, giving homemade soup complex yet harmonious layers of flavor.
