Italian Caprese Pasta Salad

Transform the classic flavors of a Caprese salad into a cold pasta dish—the perfect portable main course for summer picnics or backyard barbecues. This chilled salad brings together the essence of fresh mozzarella, juicy tomatoes, and basil, dressed in a light balsamic vinaigrette. Ingredients:

250g short pasta (such as fusilli or farfalle)  

200g cherry tomatoes  

200g fresh mozzarella balls (bocconcini)  

Handful of fresh basil leaves  

For the balsamic dressing:

¼ cup extra virgin olive oil  

2 tablespoons balsamic vinegar  

1 teaspoon Dijon mustard  

1 small garlic clove  

Salt and black pepper  

Instructions:  

1. Prepare the core ingredients:

   Cook the pasta in salted water according to package directions. Drain, rinse under cold water, and let cool completely.  

   Halve the cherry tomatoes. Cut the mozzarella balls in half or into quarters.  

   Install the chopping blade in the manual food chopper. Add the basil leaves, close the lid tightly, and pulse 2–3 times to roughly chop the basil while preserving its aroma.

2. Make the emulsified dressing:

   Empty the container and switch to the mixing paddle. Add the olive oil, balsamic vinegar, Dijon mustard, peeled garlic clove, salt, and black pepper.  

   Close the lid and turn the handle steadily until the dressing becomes thick, emulsified, and fully combined.

3. Combine and chill:

   In a large bowl, combine the cooled pasta, tomatoes, mozzarella, and chopped basil.  

   Pour the homemade balsamic dressing over the mixture and gently toss with a spatula or large spoon until everything is evenly coated.

4. Serve:  

   Enjoy immediately, or cover and refrigerate for 1–2 hours to let the flavors meld. This salad is best served chilled.
