Pan-Seared Beef Tenderloin with Red Wine Mushroom Sauce

On a cozy autumn or winter evening, elevate a simple family dinner into a celebration with this restaurant-style pan-seared beef tenderloin paired with red wine mushroom sauce. The Geedel Vegetable Chopper quickly dices mushrooms into uniform pieces, ensuring a better sauce texture and well-blended flavors, making the cooking process smooth and effortless.

Ingredients (serves 2):

Beef Tenderloin: 2 filet mignon steaks (about 200g each, 3–4cm thick)

Red Wine Mushroom Sauce: 300g mushrooms, 1 small onion, 2 garlic cloves, 1 cup dry red wine, 1 cup beef stock, 1 sprig fresh thyme, 1 tbsp butter, salt and black pepper

Sides: Creamy mashed potatoes, roasted seasonal vegetables

Steak Seasoning: Coarse sea salt, black pepper, 1 tbsp olive oil

Steps:

1.Preparation: Using the dicing blade of the Geedel Vegetable Chopper, quickly dice the mushrooms into uniform 0.5cm pieces. Change the blade and finely chop the onion and garlic. Set aside. Bring the beef tenderloin to room temperature, pat dry with paper towels, and generously season both sides with salt and pepper.

2.Sear the Beef: Heat a heavy-bottomed skillet until very hot. Add olive oil and place the steaks in the pan. Sear for 2–4 minutes per side according to preference. Transfer to a plate, loosely cover with foil, and let rest for 8–10 minutes.

3.Make the Sauce: In the same pan over medium heat, sauté the chopped onion and garlic for about 1 minute. Add the diced mushrooms, sprinkle with a little salt, and cook for 8–10 minutes until golden. Pour in the red wine, scraping up any browned bits from the bottom. Add the stock and thyme, bring to a boil, then reduce heat and simmer for 15–20 minutes until the liquid reduces by half. Remove the thyme, turn off the heat, and stir in the butter to make the sauce glossy. Season to taste.

4.Serve: Slice the beef against the grain. Plate with mashed potatoes and vegetables, arrange the beef slices on top, and drizzle with the warm mushroom sauce.
