Balsamic Strawberry Caprese Salad
A sweet summer twist on the classic Italian Caprese salad. Juicy strawberries pair wonderfully with fresh mozzarella and basil leaves, drizzled with a reduced balsamic glaze, creating a stunning appetizer or light main course. Ingredients:
250g fresh strawberries, hulled
200g fresh small mozzarella balls (bocconcini), drained
Handful of fresh basil leaves
For the Balsamic Dressing:
3 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
1 teaspoon honey
Salt and black pepper
For garnish:
Toasted pine nuts
Instructions:
1. Prepare the strawberries and basil:
Cut the strawberries into large chunks. Install the cross-shaped chopping blade in your Geedel food chopper.
Add the strawberry chunks, close the lid tightly, and quickly turn the handle 3-4 times to roughly chop the strawberries into uneven pieces, preserving some texture. Transfer to a large bowl.
Place the basil leaves into the container of the food chopper (no need to clean it), and turn the handle 1-2 times for a coarse chop, retaining their aroma and shape.

2. Make the emulsified balsamic dressing:
Empty the container and switch to the mixing paddle. Add the olive oil, balsamic vinegar, honey, salt, and black pepper.
Close the lid and turn the handle steadily for about 30 seconds until the dressing is fully emulsified, thick, and glossy.
3. Assemble the salad:
Add the mozzarella balls and chopped basil to the bowl with the strawberries.
Drizzle with the desired amount of the homemade balsamic dressing and gently toss to combine.
4. Plate and garnish:
