Mexican Lime Chicken Soup
This is a refreshing and vibrant traditional Mexican soup. Ingredients:
1 roasted chicken carcass or 2 chicken breasts, cooked and shredded
1 onion
2 carrots
2 celery stalks
4 garlic cloves
8 cups chicken broth
Juice of 2 limes, plus lime zest for garnish
1–2 jalapeño peppers (optional, sliced)
Handful of fresh cilantro
Handful of fresh mint or additional cilantro
For serving:
Fried tortilla strips
Diced avocado
Shredded cheddar cheese
Instructions:
1. Build the soup flavor base:
Cut the onion, carrots, celery, and garlic into chunks. Using the manual vegetable chopper with the chopping blade, process into uniform fine dice.
In a soup pot, sauté the diced vegetables in a little oil until softened, about 5 minutes. Add the chicken broth, jalapeño (if using), and shredded chicken (if using raw chicken breasts, add them now and cook until done). Bring to a boil, then reduce heat and simmer for 20 minutes.

2. Infuse with herbs and citrus:
