Middle Eastern Hummus with Roasted Vegetables

An ultra-smooth, sesame-rich homemade hummus is a cornerstone of healthy Mediterranean eating. Paired with simply roasted vegetables, it becomes a satisfying cold platter. Ingredients:

For the Hummus:

2 cans (400g each) chickpeas, drained (reserve some of the liquid)  

⅓ cup tahini  

Juice of 2 lemons  

2 garlic cloves  

½ teaspoon ground cumin  

3–4 tablespoons extra virgin olive oil  

Salt  

For the Roasted Vegetables:  

1 zucchini  

1 red bell pepper  

1 eggplant (optional)  

Olive oil, salt, pepper  

For Serving:  

Pita bread  

Olives  

Instructions:  

1. Make the smooth hummus base:  

   Place the chickpeas, garlic, and lemon juice in the Geedel manual food chopper (with the chopping blade installed). Close the lid tightly and turn the handle continuously until the mixture is chopped into a very coarse paste.

2. Blend to perfect smoothness:  

   Remove the chopping blade and switch to the mixing paddle. Add the tahini, cumin, and a generous pinch of salt to the container. Close the lid and turn the handle steadily. While mixing, slowly drizzle in the olive oil and a little reserved chickpea liquid through the feed opening. Continue blending for 1–2 minutes until the mixture becomes silky smooth, glossy, and light in texture.

3. Plate and garnish:  

   Spoon the hummus onto a plate and use the back of a spoon to create swirls. Drizzle with more olive oil and sprinkle with paprika or a few whole cooked chickpeas.

4. Serve:  

   Arrange the roasted vegetables, warm pita bread, and olives alongside the hummus as a shared cold main course or appetizer.
