Thai Pomelo Salad
Break all your preconceptions about salads! This Thai salad combines the sweet-bitter notes of pomelo, crispy toasted coconut flakes, roasted peanuts, and spicy seasonings into a dish with explosive layers of texture. Ingredients:
1 large pomelo (or grapefruit), peeled and segments separated into bite-sized pieces
½ cup toasted coconut flakes
½ cup roasted peanuts
1 shallot, thinly sliced
Handful of fresh mint leaves
1–2 bird's eye chilies
For the Dressing:
Juice of 2 limes
2 tablespoons fish sauce
1 tablespoon palm sugar syrup or honey
Instructions:
1. Prepare the crunchy mix:
Place the toasted peanuts and coconut flakes in the container of your Geedel manual food chopper (with the chopping blade installed).
Close the lid tightly and quickly turn the handle 4–5 times to coarsely chop the peanuts and coconut into uneven, rustic pieces—keeping plenty of texture. Set aside.

2. Make the spicy dressing:
Empty the container and switch to the mixing paddle. Squeeze in the lime juice, then add the fish sauce and palm sugar syrup or honey.
Close the lid and turn the handle steadily for about 20 seconds until the sugar is fully dissolved and the dressing is well combined.
3. Assemble the salad:
In a large bowl, gently toss together the pomelo segments, most of the peanut-coconut mixture, sliced shallot, and mint leaves.
Place the bird's eye chilies in the vegetable chopper and pulse a few times until finely chopped, then add to the bowl according to your preferred spice level.
Drizzle the lime-fish sauce dressing over the salad and use tongs or a large spoon to toss very gently, being careful not to break up the pomelo pieces.
4. Serve:
Transfer the salad to a serving plate and sprinkle with the remaining peanut-coconut mixture as garnish. Enjoy immediately.
