Turkish-Style Stuffed Eggplant Boats

Tender eggplants are halved, stuffed with spiced minced meat and vegetables, and baked until fragrant—this dish is a star on Turkish family dinner tables. The filling requires a finely and evenly chopped texture to pack perfectly into the eggplant. Your Geedel hand vegetable chopper can quickly prepare all the filling ingredients, making the process twice as efficient.

Ingredients:

2 long eggplants  

For the filling:

250g minced lamb or beef  

1 onion  

1 tomato  

2 garlic cloves  

A handful of fresh parsley  

1 tsp tomato paste  

1 tsp paprika  

½ tsp ground cinnamon  

Salt and black pepper  

Olive oil  

Tomato slices (for garnish)  

Instructions:

1. Prepare the eggplants and chop vegetables for filling:  

    Cut the eggplants in half lengthwise, score the flesh lightly, sprinkle with salt, and let sit briefly to reduce bitterness. Rinse and pat dry.  

    Brush with olive oil and bake in a preheated oven at 200°C for about 20 minutes, until softened.  

    Meanwhile, roughly chop the onion, tomato, garlic, and parsley. Fit the chopping blade into your Geedel manual food chopper, add all vegetables, secure the lid, and turn the handle continuously until finely and evenly chopped.

2. Cook the filling:  

    In a pan, sauté the minced meat until browned. Add the chopped vegetable mixture and continue cooking until the vegetables soften and any liquid evaporates.  

    Stir in tomato paste, paprika, cinnamon, salt, and pepper. Cook for another 2–3 minutes until well combined.

3. Stuff and bake:  

    Evenly divide the filling among the baked eggplant halves, pressing gently into the “boats.” Top each with a slice of tomato.  

    Return to the oven and bake for another 15–20 minutes, until the tops are lightly golden and the filling is heated through.

4. Serve:  

    Enjoy hot, optionally with yogurt or rice on the side.
