Vietnamese Grilled Pork Noodle Salad Bowl

This is a salad bowl brimming with the soul of Vietnamese street food: sweet-salty grilled pork patties, cool rice noodles, an abundance of fresh herbs, and crisp vegetables, all dressed in a tangy-sweet fish sauce dressing. Ingredients:  

For the Pork Patties:  

300g ground pork  

¼ onion  

2 garlic cloves

200g dried rice vermicelli noodles, cooked and cooled  

1 carrot  

1 cucumber  

Handful of mint and cilantro leaves

¼ cup fish sauce  

¼ cup lime juice  

2 tablespoons sugar  

⅓ cup warm water  

1 garlic clove  

1 red chili pepper  

Instructions:  

1. Make the flavorful pork patties:

   Cut the onion and garlic into chunks. Using the chopping blade of the Geedel manual vegetable chopper, process them into fine pieces.  

   Add the ground pork, fish sauce, sugar, and black pepper. Use the mixing paddle to stir in one direction until the mixture becomes sticky and well combined. Shape into small patties and pan-fry or grill until cooked through.

2. Prepare the crisp vegetables and noodles:  

   Cut the carrot and cucumber into sections. Use the chopping blade to shred them coarsely. Place the shredded vegetables in the salad spinner basket and spin quickly to remove excess moisture.  

   Gently spin the cooked and cooled rice noodles in the spinner as well to remove any excess water, making them drier and more pleasant to eat.

3. Make the balanced fish sauce dressing:  

   Empty the container and install the chopping blade. Finely chop the garlic and chili pepper.  

   Switch to the mixing paddle. Add the fish sauce, lime juice, sugar, and warm water. Close the lid tightly and turn the handle until the sugar is fully dissolved and all ingredients are well combined.

4. Assemble:  

   In each bowl, place lettuce leaves, rice noodles, shredded vegetables, bean sprouts, and herbs. Top with the grilled pork patties. Pour the fish sauce dressing over the bowl or serve it on the side for dipping.
